SMOKED MEAT GUIDE

Is your beef grassfed or grain-fed?

All cattle (cows) eat grass throughout their life. We add energy-dense local corn to their diet at the final stage of development to produce rich marbling and robust flavor resulting in premium, tender, juicy, exceptional beefy taste. The combination of grass and corn provide a consistent meat, rich in protein, vitamins, minerals and healthy fats including Omega 3 & 6.

How are your steaks cut?

The majority of our steaks both beef and pork are cut at 1in. thick. Thick enough to make them easy to cook without drying them out. We have a few unique steaks cut extra thick and it is noted in the product description.

Do you butcher the meat?

No. We stick to what we do best, raising pigs and cattle. All our meat is butchered by a local award-winning butcher only 15miles from our farm. Butchering is what they do best!

Do you raise all the meat?

We raise most all the beef. On occassion, we source from another local farm with high quality Angus beef to fill in the gaps for individual cuts (never Meat Shares). Our pork is raised on our farm or on another farm within our network of pig farmers who all have the same genetics & feed resulting in the same quality pork. Our poultry is sourced from several local farmers in our neighborhood. All our meat is 100% born and raised in America in Northwest Illinois.
