Make-Ahead Protein Breakfast Muffins

Mornings can be chaotic—but breakfast doesn’t have to be. These High-Protein Breakfast Muffins are a recipe from a customer and one we’re excited to share with you. They’re perfect for making ahead, freezing, and grabbing on your busiest mornings.

What we love most? They’re packed with flavor from our farm-raised breakfast sausageham, smoky bacon or italian sausage and totally adaptable to your favorite seasonal vegetables. Shredded zucchini from your garden? Sweet corn from the market? Spinach from the fridge? Toss them in. This is a hearty, satisfying breakfast that makes eating well easy.

You can keep a batch in the fridge for the week, or freeze them to reheat later. Either way, you’ll have a protein-rich start to your day—ready in seconds.

High-Protein Breakfast Muffins

Prep Time: 15 minutes | Cook Time: 25 minutes | Makes 12 muffins

Ingredients

  • ¾ to 1 lb KHM breakfast sausage, bacon, italian sausage or ground ham – crumbled and cooked thoroughly

  • 5 eggs

  • ¼ cup milk

  • 1 cup cottage cheese

  • 2 tsp maple syrup 

  • ¾ cup almond flour 

  • ¾ cup all-purpose or whole grain flour

  • 2 teaspoons baking powder

  • Pinch of salt

  • 2 cups chopped vegetables (see ideas below)

  • 1 cup shredded cheese

Directions

  1. In a large bowl, whisk together eggs, milk, cottage cheese, and maple syrup.

  2. Add in the flour, baking powder, and salt. Mix until nearly combined.

  3. Fold in the cooked meat, raw vegetables, and shredded cheese until evenly mixed.

  4. Prepare a muffin tin with cooking spray. Fill each cup with about ¼ cup of batter.  (see note)

  5. Bake at 400°F for 25 minutes, or until a toothpick comes out clean.

  6. Let cool and transfer to an airtight container.

    • Store in the fridge for up to 5 days, or

    • Freeze for up to 3 months.

To Reheat:

  • From frozen: microwave 1.5 minutes

  • From thawed: microwave 30 seconds


Notes & Customizations

Customer Notes (RB):

  • We used our Ground Ham  -- easy to mix in, fully cooked, simple
  • Don't use muffin papers.  Everything sticks, we tried it. 😉
  • Maple syrup is optional but so good!  We added 1/2 tsp Maple Flavoring too.

Vegetable Ideas:

  • Spinach

  • Mushrooms

  • Shredded carrot

  • Shredded zucchini (squeeze dry)

  • Sweet bell peppers

  • Roasted red peppers

  • Jalapeños

  • Sun-dried tomatoes

  • Corn
