Sweet & Smokey Country Pork Ribs

If you've never tried Country-Style Pork Ribs, they might just become your new favorite.  Tender, juicy and very meaty, these are a delicious and tasty way to feed a crowd or just your family. 

 

Country Ribs are cut from the section where the pork shoulder and loin come together resulting in a very meaty cut.  Half of them will have a small bone that looks much like a rib, while the other half will be boneless.  Despite their name, Country-style Ribs aren't true ribs.

Since they come from an area with some marbling and fat, they have a great juiciness to them while boasting a lot of flavorful tender meat.

We opted for a simple sweet rub and smoked them slowly for about 4hrs on our pellet smoker.  The result was amazing and everyone in the family loved them.  I think it might be time to make them again, soon. 

Follow our basic recipe for your own country-rib treat.  Remeber, you can always change the rub based on your flavor preferences.  I think a little heat in the rub would pair perfectly with the smoky and slightly sweet flavor.

Here's what you'll need -

1 x 4pk KHM Country-Style Ribs

Rub - stir ingredients together in a small bowl

  • 1/2 c brown sugar
  • 2 tsp galic powder
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1 TB salt
  • 1 tsp smoked paprika (regular is fine too)
  • 1/4 tsp cayene pepper (opt.)

Pat ribs dry and coat generously with rub mixture.  Let rest 1 hr or more uncovered in the refrigerator, allowing the rub to soak in a bit.  I like to look for it to be mostly dried out again, indicating salt and seasoning have reabsorbed into the meat.

Set smoker to 210°F and allow it to come to temp.  Place ribs directly on the grates.  Allow to smoke for 2 hrs without opening the smoker. 

After 2 hrs, place ribs in a foil pan and cover to finish for another 2 hrs.  Your meat should be nice and tender.  Alternatively, you can move them to a slow cooker after 2 hours to continue cooking until tender.

We ate them just the way they were, but you could serve with your favorite BBQ sauce if needed.  Perfect served wtih some fresh cole slaw or salad and watermelon.  These can be made in the crockpot or oven as well when the weather outside is too cold.
