A flavorful juicy and tender cut often called the BUTCHER'S STEAK or HANGING TENDER. A premium 'secret steak" cut that is unique and often hard to find. Resembles a cross between a Ribeye & Filet Mignon, the hanging tender is distinctly tender with more marbling than the tenderloin but more lean than a Ribeye making it juicier and flavorful.
